TEX-Mex Crawfish Soup Recipe
1lb CJ’s Brand LA Peeled Crawfish,
8 oz Guidry’s Creole Mix,
1/2 Stick Butter,1 Can of Rotel,
1 Can Whole Kernel Corn,
1 can Cream of Potato Soup,
1 Can Green Chiles,
1 Cup Vegetable Stock,
3 Cups Water,
4 oz Whipping Cream,
1 Teaspoon Minced Garlic,
1 pkg McCormick Taco Seasoning,
1/2 Teaspoon Red Pepper,
1 Teaspoon Heleaux’s Seasoning,
1/2 Cup Chopped Green Onions.
Saute the Guidry’s in Butter until tender (approx. 15 minutes). Add all of the remaining ingredients (except the crawfish and green onions) and simmer on low/med heat for 20 minutes. Add the crawfish (thawed) and green onions and simmer for 10 minutes. Can served over rice or thin corn tortilla chips with cheese and sour cream.
