Chicken Enchilada Cornbread Casserole
1 Box Jiffy Muffin Mix
1 Egg, 1/3 Cup Milk
l lb Chicken Sausage (casing removed)
8 oz Guidry’s Creole Seasoning Mix
1 Can Enchilada Sauce
2 Teaspoons Mexene Chili Powder
8 oz Shredded Mexican Cheese
Bake Cornbread according to instructions and set aside. Brown Chicken Sausage on medium heat, then add Guidry’s Creole Seasoning Mix, Enchilada Sauce, Chili Powder and simmer for 20 minutes. Crumble Cornbread and mix everything together. Top with Cheese and bake @ 350F for 15 minutes.
