Cream Cheese Enchiladas
1 bar of Cream Cheese
2 TBSP of Taco Seasoning
2 TBSP of Milk
2 TBSP of Oil
1 small onion, diced
3 cups of chicken breasts, cooked and shredded
1 can of diced tomatoes, drained
3/4 cup of Shredded Cheese
12 Flour tortillas
Pre-heat oven to 350 degrees. Mix cream cheese, taco seasoning and milk until smooth and blended. Heat oil in large skillet and stir fry onions. Add chicken, tomatoes and 1/2 cup of shredded cheese and 1/2 cup of cream cheese.
(I heat tortillas in the microwave to make more bendable) Spoon 1/3 cup of mixture down the center of each tortilla and roll up. Spray baking dish with cooking spray. Place seam sides down in baking dish. Add the remaining cheese mixture and cream cheese on top of enchiladas. Cover. Bake 15-20 minutes.
