Daisy’s Avocado and Spinach Salad
a bag Fresh Spinach (I like to chopped it up)
1 – Avocado, diced
1-2 tomatoes, diced
1 – cucumber, diced
a generous amount of chopped cilantro
a generous amount of green onions
1 – can of black beans, drained
1 – can of corn, drained
1 – can of chick peas, drained
1 Tablespoon of Lime (more or less)
Cajun Seasoning, to taste
Mix together and serve.
This salad goes great on the side of Heleaux’s Grocery and Specialty Meats Ribeye Bites. Ribeyes bites are a pieces of ribeye wrapped up in bacon. I put of them on a baking tray and popped in the oven. I really like this little things. Every bite is very tasty and filling. The best part is that you do not have to do anything to the meat.
