Enchilada Soup
1 1/2 lb Fresh Ground Chuck,
8 oz Guidry’s Fresh Cut Creole Mix,
10 oz Can Rotel,
Can Enchilada Sauce,
Can Whole Kernel Corn,
16 oz Kitchen Basics Beef Stock,
16 oz Kitchen Basics Vegetable Stock,
4 Cups Water,
1 Pkg. McCormick Enchilada Seasoning,
2 Teaspoon Heleaux’s Seasoning,
2 Teaspoons Salt,
1 Teaspoon Dry Parsley Flakes,
1/4 Cup Chopped Green Onions,
2 Tablespoons Fresh Lime Juice,
Corn Chips,
Shredded Cheese
Brown the Ground Meat then add all of the remaining ingredients except the Corn Chips and Cheese. Bring the soup to a boil then reduce to simmer for about 30 minutes. Serve with chips and cheese!
