In The Kitchen: Burrito Casserole

Burrito Casserole

1 lb Ground Beef,

8 oz Guidry’s Creole Seasoning,

16 oz Can Chili Beans,

16 oz Can Diced Tomatoes (drained),

1 Pkg. McCormick Taco Seasoning,

1 can Whole Kernel Corn (drained),

1/2 Teaspoon Red Pepper,

1 Teaspoon Fresh Minced Garlic,

1/2 Cup Chopped Green Onions,

8 oz Shredded Cheddar Cheese.

6 Flour Tortillas cut in 1/2.

Cut the Tortillas in 1/2 and set aside. Brown Ground Beef then add Guidry’s Creole Seasoning, simmer for 20 minutes. Add All of the remaining ingredients (except the cheese and Flour Tortillas). Simmer for 15 Minutes. Pour a 1/4 of the mix in a Baking Dish or Pan add a 1/4 of the Cheese and cover with 4 halves of Flour Tortillas with the cut side facing the sides of the pan.
Repeat twice and top with remaining mixture and cheese. Bake Covered @ 350F for 20 minutes. Let Stand at Room Tempature for 15 minutes before Slicing into squares!
