Pepper Steak
1 lb sirloin steak, cut into thin strips
2 tbsp. olive oil
12 mini sweet peppers, thinly sliced
3 spring onions, sliced (I used yellow onions)
2TBSP of fresh ginger, minced
4 cloves of garlic, minced
FOR THE MARINADE:
1/4 cup of coconut oil
1/3 cup water
2 TBSP white wine vinegar
1/4 tsp black pepper
Comine all of the ingredients for the marinade in a large bowl. Add the steak and toss to coat. Refrigerate for 15 minutes. Heat a skillet to med-high, add some coconut oil. Now add bell peppers, onion, ginger, and garlic. Saute for 3 to 4 minutes. Remove vegetables and set aside. Add steak to same skillet. Saute until brown. Add vegetables. Cook for another minute. Serve.
